Kombucha is an aerobic ferment, meaning it needs oxygen, so the lid is designed with slats to allow for air circulation in the crock. It also comes with an easy to attach cotton cloth which keeps fruit flies and dust out. The cloth attaches to the crock for a tight elastic seal and the lid goes on top to conceal the cloth.
