These European style crocks are ideal for fermenting Kimchi, Sauerkraut, Cucumber Pickles and many other vegetables. The lid sits in a water moat and acts as a seal, preventing mold growth. The weights -- which come in four pieces, making them easy to insert and remove -- are used to submerge vegetables below the surface of the brine.
The interiors of all of my crocks are glazed with a special white liner glaze, which I use for its high durability and stability. This a glass-like glaze that is non-toxic and 100% food safe.
All crocks are hand-thrown on the potter's wheel in my home studio in Santa Fe, New Mexico.
